1 green chili (slit)

1 tsp ginger (sliced)

1 cup thin coconut milk

½ cup thick coconut milk

1 tbsp coconut oil

1 small cinnamon stick

2 cloves

4–5 curry leaves

Salt to taste

1️⃣ Cook the Vegetables

In a pan, add vegetables, thin coconut milk, salt, green chili, and ginger.

Cook until vegetables are soft.

2️⃣ Prepare the Tempering

In another pan, heat coconut oil.

Add cinnamon, cloves, and curry leaves.

Add sliced onions and sauté until soft (do not brown).

3️⃣ Combine

Add thick coconut milk and cook on low flame for 2–3 minutes.

Do not boil after adding thick coconut milk.
