Tomato Rice is a simple, flavorful South Indian dish made with ripe tomatoes, spices, and cooked rice. Perfect for lunch boxes and busy days.
📝 Ingredients
Cooked rice – 2 cups (cooled)
Ripe tomatoes – 3 (finely chopped)
Onion – 1 medium (sliced)
Green chilli – 1 (slit)
Ginger-garlic paste – 1 tsp
Turmeric powder – ¼ tsp
Red chilli powder – ½ tsp
Garam masala – ½ tsp
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Curry leaves – few
Peanuts or cashews – 2 tbsp
Oil – 2 tbsp
Salt – to taste
Coriander leaves – for garnish
👩🍳 How to Make Tomato Rice
Heat oil in a pan. Add mustard seeds and cumin seeds. Let them splutter.
Add peanuts/cashews and fry until golden.
Add curry leaves, green chilli, and onion. Sauté until soft.
Add ginger-garlic paste and cook for 1 minute.
Add chopped tomatoes, turmeric, chilli powder, garam masala, and salt. Cook until tomatoes become soft and oil separates.
Add cooked rice and mix gently.
Cook for 2–3 minutes on low flame.
Garnish with coriander leaves.

Serve with raita, papad, or pickle.

Add a little lemon juice for extra tangy taste.
You can add mixed vegetables for a healthier version.
