Chole Masala Recipe (Punjabi Style)
Chole Masala is a popular North Indian curry made with chickpeas cooked in a spicy, tangy tomato-onion gravy. It’s filling, flavorful, and perfect for lunch or dinner.
📝 Ingredients
Chickpeas (chole) – 1 cup (soaked overnight & boiled)
Onion – 2 medium (finely chopped)
Tomato – 2 medium (pureed)
Ginger-garlic paste – 1 tbsp
Green chilli – 1 (slit)
Oil – 2 tbsp
Bay leaf – 1
Cumin seeds – 1 tsp
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Coriander powder – 1½ tsp
Chole masala powder – 1½ tsp
Salt – to taste
Water – as needed
Coriander leaves – for garnish
👩🍳 How to Make Chole Masala
Heat oil in a pan. Add cumin seeds and bay leaf.
Add onions and sauté until golden brown.
Add ginger-garlic paste and green chilli; fry for a minute.
Add tomato puree, turmeric, chilli powder, coriander powder, and salt. Cook until oil separates.
Add boiled chickpeas and mix well.
Add water and simmer for 10–12 minutes.
Add chole masala powder, mix, and cook for 2 more minutes.
Garnish with coriander leaves and turn off the heat.
🍽️ Serving Suggestions
Serve hot with bhature, roti, naan, or steamed rice.
🌟 Tips
Slightly mash a few chickpeas for thicker gravy.
Add a tea bag while boiling chickpeas for darker color (remove later).
