🍩 Medu Vada Recipe (Crispy Outside, Soft Inside)

Medu Vada is a classic South Indian snack made from urad dal batter, deep-fried until golden and crisp. It’s perfect for breakfast or evening snacks.

📝 Ingredients

Urad dal – 1 cup (soaked 4–5 hours)

Green chilli – 1–2 (finely chopped)

Ginger – 1 tsp (grated)

Black pepper – ½ tsp (crushed, optional)

Curry leaves – 8–10 (chopped)

Onion – 2 tbsp (finely chopped, optional)

Salt – to taste

Oil – for deep frying

👩‍🍳 How to Make Medu Vada

Grind soaked urad dal into a thick, fluffy batter using very little water.

Add salt, green chilli, ginger, pepper, curry leaves, and onion. Mix well.

Heat oil on medium flame.

Wet your hand, take a small portion of batter, shape into a vada, and make a hole in the center.

Gently slide into hot oil and fry until golden and crisp on both sides.

Remove and drain on tissue paper.

🍽️ Serving Suggestions

Serve hot with coconut chutney and sambar.

🌟 Tips

Batter should be thick and airy for soft vadas.

Do not overcrowd the pan while frying.
