Veg Pulao is a light, aromatic rice dish cooked with mixed vegetables and whole spices. It’s quick to make and perfect for lunch or dinner.
📝 Ingredients
Basmati rice – 1½ cups (washed & soaked 20 min)
Mixed vegetables – 1 cup (carrot, beans, peas)
Onion – 1 large (thinly sliced)
Green chilli – 1–2 (slit)
Ginger-garlic paste – 1 tsp
Whole spices: bay leaf, cinnamon, cloves, cardamom
Cumin seeds – 1 tsp
Oil or ghee – 2 tbsp
Salt – to taste
Water – 3 cups
Coriander leaves – for garnish
👩🍳 How to Make Veg Pulao
Heat oil or ghee in a pressure cooker or deep pan.
Add cumin seeds and whole spices; sauté until aromatic.
Add onions and fry until light golden.
Add ginger-garlic paste and green chillies; sauté for a minute.
Add mixed vegetables and stir for 2 minutes.
Add soaked rice, salt, and water. Mix gently.
Pressure cook for 1 whistle or cook covered until rice is done.
Rest for 5 minutes, fluff gently, and garnish with coriander.
🍽️ Serving Suggestions
Serve with raita, pickle, or plain curd.

Use ghee for rich aroma.
Do not over-stir after adding rice to keep grains separate.
