How to make simple soap papudi

 

How to Make Soap Papudi (Sweet Papdi / Soan Papdi)


Ingredients


Gram flour (Besan) – 1 cup


All-purpose flour (Maida) – 1 cup


Ghee – 1½ cups


Sugar – 2 cups


Water – 1 cup


Milk – 2 tbsp


Cardamom powder – ½ tsp


Chopped almonds & pistachios – for garnish



Method (Simple Steps)


1. Roast flours

Heat 1 cup ghee in a pan. Add besan and maida. Roast on low flame till light golden and aromatic. Keep aside.



2. Make sugar syrup

Boil sugar and water until one-string consistency. Add milk, mix, and remove impurities. Add cardamom powder.



3. Mix syrup & flour

Pour hot syrup slowly into the roasted flour mixture. Mix continuously.



4. Pulling process

Add remaining ghee little by little. Stretch and fold the mixture repeatedly to create fine layers (this gives the flaky texture).



5. Set the papudi

Transfer to a greased tray. Press lightly and sprinkle nuts.



6. Cool & cut

Let it cool completely. Cut into pieces and serve.

Tips


Always cook on low flame.


Pulling the mixture well makes it soft and flaky.


Store in an airtight box for freshness.
