Parfect chicken biryani

 

Here is a simple and perfect Chicken Biryani recipe you can make at home 👇😋


Chicken Biryani Recipe (Dum Style)


🧅 Ingredients (Serves 3–4)


For Chicken Marination

500g chicken (with bone preferred)

½ cup curd (thick)

1 tbsp ginger-garlic paste

1 tsp turmeric

1½ tsp red chilli powder

1 tsp garam masala / biryani masala

1 tsp coriander powder

2 tbsp lemon juice

Salt to taste

2 tbsp oil

A handful of chopped mint + coriander


For Rice

2 cups basmati rice

Whole spices:

2 bay leaves

4 cloves

2 cardamom

1 cinnamon stick

1 star anise (optional)

1 tsp salt


Other Ingredients

2 onions (thinly sliced)

2 tomatoes (optional)

3–4 green chillies

2 tbsp ghee

3 tbsp oil


Saffron soaked milk (or yellow food colour mixed with 2 tbsp milk)


More mint + coriander


🍗 Step-by-Step Preparation


1️⃣ Marinate the Chicken (30 min–2 hrs)

Mix all marination ingredients with chicken.

Cover and rest so chicken becomes soft and flavourful.


2️⃣ Cook Rice (70% done)

1. Wash basmati rice and soak for 20–30 mins.

2. Boil water with whole spices + salt.

3. Add soaked rice and cook until 70% cooked (grains should break with some firmness).

4. Drain and keep aside.


3️⃣ Fry Onions (Birista)

Heat oil and fry sliced onions until golden and crispy.


Keep half aside for garnish.


4️⃣ Cook the Chicken Masala

1. In the same pot, add some oil + ghee.

2. Add green chillies, mint, coriander.

3. Add marinated chicken and cook on medium flame for 10–12 mins.

4. Add tomatoes (optional) and cook until chicken is 70% done.

(Do NOT dry it completely; leave some gravy.)


5️⃣ Dum Layering


In a heavy-bottom pot:


1. Bottom layer: Chicken masala

2. Top layer: Cooked rice

3. Sprinkle:

Fried onions

Mint + coriander

Ghee

Saffron milk/colour

Repeat layers if needed.

Seal the pot with:

Dough OR a tight lid + heavy weight.


6️⃣ Dum Cooking

Cook on high flame for 5 minutes

Then on low flame for 20–25 minutes

Rest for 10 minutes before opening

This makes the biryani soft, aromatic, and flavorful.
