How to make veg biryani

 

Here is a simple, flavorful Veg Biryani recipe you can make at home — restaurant style but easy!

🌿 VEG BIRYANI (Dum Style) – Step-by-Step



⭐ Ingredients


For Rice


1.5 cups basmati rice


6 cups water


1 bay leaf


2–3 cloves


2 cardamom


1 small cinnamon


Salt (as needed)



For Veg Masala


2 tbsp oil + 1 tbsp ghee


1 big onion (thinly sliced)


1 tomato (chopped)


1 tbsp ginger-garlic paste


2 green chillies (slit)


1 cup mixed vegetables (carrot, beans, potato, peas, cauliflower)


1 cup thick curd


1 tsp red chilli powder


½ tsp turmeric


2 tsp biryani masala


Salt to taste


A handful of mint & coriander leaves



For Dum


Saffron strands soaked in 2 tbsp warm milk

(or 1 tsp turmeric milk)


1 tbsp ghee


🍚 Step-by-Step Method


1. Cook the Rice (70% done)


1. Wash and soak basmati rice for 20 minutes.



2. Boil water with whole spices + salt.



3. Add rice and cook till it is 70–80% cooked (grains long but firm).



4. Drain and keep aside.



2. Prepare the Veg Masala


1. Heat oil + ghee.



2. Add onions and fry until golden brown.



3. Add ginger-garlic paste + green chillies.



4. Add tomato and sauté until soft.



5. Add all spices (turmeric, chilli, biryani masala).



6. Add chopped vegetables and cook 5 minutes.



7. Add curd, mix well, and cook until masala thickens.



8. Add mint & coriander.



3. Layering the Biryani


1. In a heavy pan, spread a thin layer of veg masala.



2. Add a layer of rice.



3. Drizzle saffron milk + little ghee.



4. Repeat layers until all rice and masala are used.



5. Top with fried onions, mint, and ghee.



4. Dum Cooking


1. Cover the pot with a tight lid (or seal with dough).



2. Cook on low flame for 15–20 minutes.



3. Rest for 10 minutes before serving.
