How to make kaaraboondi

 

Here’s a simple and tasty Kaaraboondi (Kara Boondi) recipe — a popular South Indian spicy snack made from gram flour (besan):


🌶️ Ingredients:


For Boondi:


Gram flour (besan) – 1 cup


Water – as needed (to make a smooth batter)


Baking soda – a pinch


Salt – ½ tsp


Oil – for deep frying



For Seasoning:


Curry leaves – few


Roasted peanuts – 2 tbsp


Cashew nuts – 1 tbsp (optional)


Red chili powder – ½ to 1 tsp (adjust to taste)


Black pepper powder – ¼ tsp (optional)


Hing (asafoetida) – a pinch


Salt – to taste


🍳 Method:


1. Prepare the batter


In a bowl, mix besan, salt, and a pinch of baking soda.


Gradually add water to make a smooth, lump-free batter — not too thick, not too thin (it should flow easily through the boondi ladle holes).



2. Fry the boondi


Heat oil in a deep frying pan.


Hold a boondi ladle (perforated spoon) over the hot oil.


Pour some batter on the ladle and tap gently — small drops will fall into the oil.


Fry until the boondis turn golden and crisp, then remove and drain on tissue paper.


Repeat the same for the rest of the batter.



3. Prepare the seasoning


Heat 1 tbsp oil in a small pan.


Add curry leaves, peanuts, cashews, hing, and fry till golden.


Add red chili powder, pepper, and a little salt. Mix well and switch off the heat.



4. Mix everything


Add the fried boondi to the seasoning and toss well until evenly coated with the spices.



5. Cool and store


Let it cool completely and store in an airtight container.


It stays fresh for up to 2 weeks.
