Vegetable Biryani (Fragrant Spiced Rice) 


Vegetable Biryani is a delicious, aromatic one-pot rice dish loaded with vegetables, fragrant spices, and herbs. It’s perfect for a special meal and pairs well with raita or salad.  


 Ingredients


 **For the Rice:**  

- 1½ cups basmati rice, soaked for 30 minutes  

- 4 cups water  

- 2 cloves  

- 1 bay leaf  

- 2 green cardamoms  

- ½ tsp salt  


 **For the Biryani Masala:**  

- 2 tbsp ghee or oil  

- 1 onion, thinly sliced  

- 1 tomato, chopped  

- 3 cloves garlic, minced  

- 1-inch ginger, grated  

- 1 green chili, chopped (optional)  

- 1½ cups mixed vegetables (carrots, peas, beans, potatoes)  

- ½ cup yogurt  

- 1 tsp turmeric powder  

- 1 tsp red chili powder  

- 1 tsp garam masala  

- ½ tsp cumin powder  

- ½ tsp coriander powder  

- ½ tsp salt (adjust to taste)  

- ¼ cup chopped cilantro  

- ¼ cup chopped mint  

- 1 tbsp lemon juice  


*Instructions:*


1. **Cook the Rice:**  

   - Boil water with cloves, bay leaf, cardamoms, and salt. Add the soaked rice and cook until 80% done. Drain and set aside.  


2. **Prepare the Masala:**  

   - Heat ghee/oil in a large pan. Sauté onions until golden brown.  

   - Add garlic, ginger, and green chili. Sauté for another minute.  

   - Add chopped tomatoes and cook until soft. Stir in turmeric, red chili powder, cumin, coriander, and garam masala.  

   - Mix in yogurt, then add chopped vegetables and salt. Cook for 5-7 minutes.  


3. **Layer the Biryani:**  

   - In the same pan or a heavy-bottomed pot, spread half the vegetable masala. Layer half the cooked rice over it.  

   - Sprinkle cilantro, mint, and a little lemon juice. Repeat the layering with the remaining masala and rice.  


4. **Dum Cooking (Slow Cooking):**  

   - Cover with a tight lid and cook on low heat for 10-15 minutes to let the flavors blend.  


5. **Serve & Enjoy:**  

   - Fluff the biryani gently with a fork and serve hot with raita or yogurt.
