Kulfi is a rich and creamy frozen dessert made with thickened milk, sugar, and aromatic flavors like cardamom, saffron, and nuts. Unlike regular ice cream, kulfi is denser and more indulgent.
Ingredients
- 2 cups full-fat milk
- ½ cup condensed milk (or ¼ cup sugar)
- ¼ cup heavy cream (optional, for extra creaminess)
- ¼ tsp cardamom powder
- 10-12 saffron strands (optional)
- 2 tbsp chopped nuts (pistachios, almonds, cashews)
- ½ tsp rose water (optional)
Instructions
1. **Reduce the Milk:**
- In a heavy-bottomed pan, heat the milk on medium flame. Stir continuously and let it simmer until it reduces to about half its original quantity. This step gives kulfi its signature richness.
2. **Add Flavorings:**
- Stir in the condensed milk (or sugar), cardamom powder, saffron, and chopped nuts. Mix well and simmer for another 5-7 minutes, stirring occasionally.
3. **Cool & Freeze:**
- Remove from heat and let the mixture cool to room temperature. Add rose water if using.
- Pour into kulfi molds, small cups, or popsicle molds. Cover with foil and insert a wooden stick.
4. **Freeze the Kulfi:**
- Place in the freezer for at least 6-8 hours, or until fully set.
5. **Serve:**
- To unmold, dip the kulfi mold in warm water for a few seconds and gently pull it out. Garnish with more chopped nuts and enjoy!
