Lemon Herb Grilled Chicken Skewers:


Ingredients:


2 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)


3 tbsp olive oil


2 tbsp lemon juice (freshly squeezed)


Zest of 1 lemon


3 garlic cloves (minced)


1 tsp dried oregano


1 tsp dried thyme


1/2 tsp paprika


Salt and pepper to taste


Fresh parsley (for garnish)


Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)



Instructions:


1. Prepare the Marinade: In a bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, salt, and pepper. Whisk until well combined.



2. Marinate the Chicken: Place the cubed chicken in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken and toss to coat. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours) to allow the flavors to infuse.



3. Skewer the Chicken: Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken cubes onto the skewers, ensuring they’re evenly spaced.



4. Grill the Skewers: Place the skewers on the grill and cook for 6-8 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).



5. Serve: Remove the skewers from the grill and let the chicken rest for a few minutes. Garnish with fresh parsley and serve with rice, couscous, or a fresh salad for a complete meal.
