Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1 cucumber, diced
1 pint cherry tomatoes, halved
1/2 red onion, finely chopped
1/2 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp dried oregano
1/2 tsp garlic powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Vegetables: Dice the cucumber, halve the cherry tomatoes, and chop the red onion.
2. Combine the Salad: In a large bowl, combine the chickpeas, cucumber, tomatoes, red onion, olives, and feta cheese.
3. Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper. Taste and adjust seasoning as needed.
