Creamy Garlic Parmesan Chicken Pasta:

Ingredients:


2 chicken breasts (boneless, skinless)


8 oz fettuccine or your favorite pasta


3 tbsp olive oil


4 garlic cloves (minced)


1 cup heavy cream


1/2 cup grated Parmesan cheese


1/2 tsp Italian seasoning


1/4 tsp crushed red pepper flakes (optional)


Salt and pepper to taste


Fresh parsley (for garnish)


1 tbsp butter



Instructions:


1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.



2. Cook the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and let it rest for a few minutes, then slice it into thin strips.



3. Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil and the butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer, stirring occasionally. Stir in the Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using). Simmer for 3-4 minutes until the sauce thickens slightly.



4. Combine: Add the cooked pasta to the skillet and toss to coat in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to loosen it up.



5. Serve: Top with the sliced chicken and sprinkle with fresh parsley. Serve immediately, and enjoy!
