Mixed vegetables – 1 to 1.5 cups (carrot, beans, peas, potatoes, etc.), chopped
Onion – 1, finely chopped
Tomato – 1, chopped
Green chilies – 2, slit
Ginger-garlic paste – 1 tsp
Tamarind pulp – 1 tbsp
Salt – to taste
Oil – 1 tbsp
Ghee – 1 tbsp (optional, for extra flavor)

Dry red chilies – 3-4
Cloves – 2-3
Cinnamon – 1-inch piece
Grated coconut – 2 tbsp (optional)
Methi seeds (optional) – 1/4 tsp
Instructions:
Step 1: Prepare Bisibele Bath Masala
1. Dry roast the spices: coriander seeds, cumin seeds, black sesame seeds, black pepper, fenugreek seeds, dry red chilies, cloves, and cinnamon in a pan over low heat until they release their aroma.
2. If using, add grated coconut to the pan and roast for a minute.
3. Let the roasted spices cool, and then grind them into a smooth powder.
Step 2: Cook Rice and Lentils
1. Wash rice and toor dal together and cook them in a pressure cooker with 3 cups of water for about 3-4 whistles or until soft. Set aside.
Step 3: Prepare the Bisibele Bath
1. Heat oil in a large pan and add curry leaves, green chilies, and chopped onions. Sauté until the onions are golden brown.
2. Add the ginger-garlic paste and cook until the raw smell disappears.
3. Add chopped tomatoes, salt, and cook until the tomatoes turn soft.
4. Add the chopped mixed vegetables and cook until they soften (you can add a little water if needed).
5. Add tamarind pulp and stir well.
6. Now, add the ground Bisibele Bath masala and mix everything together. Cook for 5 minutes to allow the flavors to blend.
Step 4: Combine Rice, Dal, and Vegetable Mixture
1. Add the cooked rice and dal mixture to the pan with the vegetables and masala.
2. Pour in about 1-1.5 cups of water to achieve the desired consistency (Bisibele Bath is slightly runny).
3. Mix everything well, and cook on low heat for about 10-15 minutes to allow the flavors to infuse. Adjust salt if needed.
Step 5: Finish with Ghee and Garnish
1. Add a little ghee on top for extra richness (optional).
2. Garnish with coriander leaves and serve hot.
