## **Ingredients**


- 2 tablespoons vegetable oil

- 1 teaspoon cumin seeds

- 2 large onions, finely chopped

- 2 green chilies, slit lengthwise (adjust to taste)

- 1 teaspoon ground turmeric

- 1 teaspoon ground coriander

- 1 teaspoon ground cumin

- 1 teaspoon garam masala

- 1 teaspoon red chili powder (adjust to taste)

- 2 large tomatoes, chopped

- 1 pound (450g) chicken pieces, bone-in or boneless, skin removed

- 1 cup water

- Salt, to taste

- Fresh cilantro leaves, chopped, for garnish


 **Instructions**


1. **Sauté Aromatics:**

   - Heat vegetable oil in a large pan over medium heat.

   - Add cumin seeds and let them sizzle for a few seconds until aromatic.

   - Add chopped onions and sauté until golden brown, about 5-7 minutes.

   - Stir in minced garlic, grated ginger, and slit green chilies; cook for another 2 minutes.


2. **Add Spices:**

   - Add ground turmeric, coriander, cumin, garam masala, and red chili powder to the onion mixture.

   - Cook the spices for 1-2 minutes, stirring continuously to prevent burning.


3. **Incorporate Tomatoes:**

   - Add chopped tomatoes to the pan.

   - Cook until the tomatoes soften and the oil begins to separate from the mixture, about 5 minutes.


4. **Cook Chicken:**

   - Add the chicken pieces to the pan, stirring to coat them evenly with the spice mixture.

   - Cook for 5-6 minutes, allowing the chicken to brown slightly.


5. **Simmer Curry:**

   - Pour in water and add salt to taste.

   - Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for 20-25 minutes, or until the chicken is cooked through and tender.
