Strawberry Cheesecake

 

Here's a simple and delightful **Strawberry Cheesecake** recipe!  


Strawberry Cheesecake

Ingredients:


**For the crust:**  

- 1 ½ cups (150g) crushed graham crackers  

- ¼ cup (50g) granulated sugar  

- ½ cup (115g) melted butter  


**For the cheesecake filling:**  

- 16 oz (450g) cream cheese, softened  

- ¾ cup (150g) granulated sugar  

- 1 tsp vanilla extract  

- 2 eggs  

- ½ cup (120ml) sour cream  


**For the strawberry topping:**  

- 2 cups fresh strawberries, sliced  

- ¼ cup (50g) granulated sugar  

- 1 tbsp lemon juice  


 **Instructions:**  


1. **Prepare the crust:**  

   - Preheat your oven to 325°F (160°C).  

   - In a bowl, mix crushed graham crackers, sugar, and melted butter.  

   - Press the mixture firmly into the bottom of a greased 9-inch (23 cm) springform pan.  

   - Bake for 10 minutes, then let it cool.  


2. **Make the cheesecake filling:**  

   - In a large bowl, beat the softened cream cheese and sugar until smooth.  

   - Add vanilla extract and eggs, one at a time, mixing just until combined.  

   - Stir in the sour cream until smooth.  

   - Pour the filling over the cooled crust and smooth the top.  


3. **Bake the cheesecake:**  

   - Bake for 40-45 minutes until the center is slightly jiggly but set around the edges.  

   - Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open.  

   - Refrigerate for at least 4 hours or overnight.  


4. **Prepare the strawberry topping:**  

   - In a saucepan, combine strawberries, sugar, and lemon juice.  

   - Cook over medium heat, stirring occasionally, until the strawberries break down and the sauce thickens (about 10 minutes).  

   - Let it cool before spreading over the chilled cheesecake.  


5. **Serve:**  

   - Slice and enjoy your creamy, dreamy strawberry cheesecake!
