- 1/4 cup basmati rice

- 1 liter whole milk

- 1/2 cup sugar

- 1 tablespoon rose water (optional)


**Instructions**


1. **Prepare the Rice**: Rinse the basmati rice thoroughly and soak it in water for 30 minutes. Drain and grind it to a coarse paste using a little water.


2. **Infuse Saffron**: Soak the saffron strands in 2 tablespoons of warm milk and set aside.


3. **Cook the Milk**: In a heavy-bottomed pan, bring the whole milk to a boil. Reduce the heat and let it simmer until it reduces slightly.


4. **Add Rice Paste**: Stir in the rice paste slowly, ensuring no lumps form. Cook on low heat, stirring continuously, until the mixture thickens and the rice is cooked.


5. **Sweeten and Flavor**: Add sugar, saffron-infused milk, cardamom powder, and rose water (if using). Mix well and cook for another 5-7 minutes.


6. **Garnish**: Pour the phirni into serving bowls, garnish with chopped nuts, and let it cool. Refrigerate for a few hours before serving chilled.
