 **Ingredients**


- 1 cup gram flour (besan)

- 2 tablespoons oil

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1 large onion, finely chopped

- 2 green chilies, finely chopped

- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- Salt to taste

- 2 cups water

- Fresh coriander leaves, chopped (for garnishing)


 **Instructions**


1. **Prepare the Gram Flour Mixture**: In a bowl, mix the gram flour with 2 cups of water to form a smooth, lump-free batter. Set aside.


2. **Sauté Aromatics**: Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Then, add cumin seeds and sauté for a few seconds.


3. **Cook Onions and Spices**: Add the chopped onions and green chilies to the pan. Sauté until the onions turn translucent. Stir in the ginger-garlic paste and cook until the raw aroma dissipates.


4. **Add Dry Spices**: Sprinkle turmeric powder, red chili powder, and salt into the mixture. Mix well and cook for another minute.


5. **Incorporate Gram Flour Batter**: Slowly pour the gram flour batter into the pan, stirring continuously to prevent lumps from forming.


6. **Cook the Jhunka**: Continue to cook the mixture on medium heat, stirring occasionally, until it thickens to a porridge-like consistency and the raw taste of the gram flour is gone.


7. **Garnish and Serve**: Once cooked, garnish with freshly chopped coriander leaves. Serve hot with **Bhakri**, **roti**, or steamed rice.
