Ingredients


- 2 cups plain yogurt (preferably full-fat)

- 1/2 cup powdered sugar

- A pinch of saffron strands

- 2 tablespoons warm milk

- 1/2 teaspoon cardamom powder

- 2 tablespoons chopped nuts (almonds, pistachios)

- 1 tablespoon rose water (optional)


## **Instructions**


1. **Strain the Yogurt**: Place the plain yogurt in a muslin cloth or cheesecloth. Tie it up and hang it over a bowl to drain the whey for about 4-5 hours or until you get thick, creamy yogurt (also known as hung curd).


2. **Infuse Saffron**: Soak the saffron strands in warm milk and set aside for a few minutes to release its color and aroma.


3. **Prepare the Shrikhand**: Transfer the hung curd to a mixing bowl. Add powdered sugar, saffron-infused milk, cardamom powder, and rose water (if using). Mix well until smooth and creamy.


4. **Chill and Serve**: Refrigerate the shrikhand for at least an hour. Garnish with chopped nuts before serving chilled.
