Garlic Butter Lemon Chicken
Juicy, tender chicken cooked in a rich garlic butter sauce with a hint of lemon!
Ingredients:
2 boneless, skinless chicken breasts (or thighs)
2 tbsp unsalted butter
1 tbsp olive oil
4 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp dried oregano
Juice of 1 lemon
Zest of ½ lemon
½ cup chicken broth
Fresh parsley for garnish
Lemon slices for serving
Instructions:
Prepare the Chicken:
Pat the chicken dry with paper towels.
Season both sides with salt, pepper, paprika, and oregano.
Sear the Chicken:
Heat olive oil in a large skillet over medium heat.
Add the chicken and cook for 5–6 minutes per side until golden brown.
Remove and set aside.
Make the Garlic Butter Sauce:
In the same pan, melt butter and sauté garlic until fragrant (about 30 seconds).
Pour in the chicken broth, lemon juice, and lemon zest.
Let it simmer for 2 minutes, scraping the bottom of the pan.
Finish Cooking the Chicken:
Return the chicken to the skillet.
Spoon the sauce over the chicken and let it cook for another 5 minutes, or until fully cooked (internal temp: 165°F).
Serve & Enjoy:
Garnish with fresh parsley and lemon slices.
Serve with rice, mashed potatoes, or roasted veggies.
