Sweet Potato & Egg Breakfast Hash


A hearty, nutritious, and flavorful breakfast packed with protein and fiber to keep you full for hours!  


 **Ingredients** (Serves 2)  

- 1 medium sweet potato, peeled and diced  

- 1/2 small onion, chopped  

- 1/2 red bell pepper, chopped  

- 1 tablespoon olive oil  

- 1/2 teaspoon smoked paprika  

- 1/4 teaspoon garlic powder  

- Salt & black pepper to taste  

- 2 eggs  

- 1/4 cup crumbled feta cheese (optional)  

- Fresh parsley or green onions for garnish  


 **Instructions**  

1. **Cook the Sweet Potatoes:** Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally.  

2. **Add Vegetables & Seasoning:** Add chopped onion, bell pepper, smoked paprika, garlic powder, salt, and pepper. Sauté for another 5 minutes until the veggies are tender.  

3. **Make Space for the Eggs:** Create two small wells in the hash and crack an egg into each. Cover the skillet and cook for 3-5 minutes until the egg whites are set but the yolks are still runny.  

4. **Serve & Enjoy:** Sprinkle with crumbled feta and fresh parsley. Serve hot and enjoy!  


This dish is easy to customize—add black beans, avocado, or hot sauce for extra flavor!
