**Ingredients** (Serves 2)
- 4 slices of bread (brioche, sourdough, or whole wheat)
- 2 eggs
- 1/2 cup milk (dairy or non-dairy)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon butter (for cooking)
- 1 apple, thinly sliced
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon ground nutmeg (optional)
- Powdered sugar for dusting (optional)
**Instructions**
1. **Prepare the Batter:** In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
2. **Cook the Apples:** In a pan over medium heat, melt a little butter and sauté the apple slices with maple syrup and nutmeg for 3-4 minutes until soft. Set aside.
3. **Cook the French Toast:** Heat butter in a skillet over medium heat. Dip each slice of bread into the egg mixture, coating both sides. Cook for about 2-3 minutes per side until golden brown.
