Perfect Suji Halwa (Sheera) Recipe
Suji Halwa, also known as Sheera, is a classic Indian dessert made with semolina, ghee, sugar, and flavored with cardamom. It’s a quick and easy sweet dish perfect for festivals or special occasions.
**Ingredients** (Serves 3-4)
- 1/2 cup suji (semolina)
- 1/4 cup ghee (clarified butter)
- 1/2 cup sugar (adjust to taste)
- 1 1/2 cups water (or milk for a richer taste)
- 1/4 teaspoon cardamom powder
- 8-10 cashews, chopped
- 8-10 raisins
- A few saffron strands (optional)
**Instructions**
**Step 1: Roast the Suji**
1. Heat **ghee** in a pan on medium heat.
2. Add **cashews and raisins**, sauté until golden, then remove and set aside.
3. Add **suji** to the same pan and roast on low-medium heat for **6-8 minutes** until it turns golden and aromatic. Stir continuously to prevent burning.
**Step 2: Prepare the Sugar Syrup**
1. In a separate saucepan, heat **water (or milk)** and add sugar. Stir until dissolved.
2. Add **cardamom powder and saffron strands** (if using). Keep warm.
**Step 3: Cook the Halwa**
1. Slowly pour the hot sugar syrup into the roasted suji while stirring continuously to avoid lumps.
2. Cook for **2-3 minutes**, stirring constantly, until the mixture thickens and absorbs all the liquid.
3. Add the roasted cashews and raisins, mix well.
**Step 4: Serve & Enjoy**
- Serve warm, garnished with **more nuts or a drizzle of ghee**!
**Tips for the Best Suji Halwa:**
- Always roast suji **on low heat** to avoid a raw taste.
- Adjust sweetness by adding more or less sugar.
- For a richer taste, replace water with **full-fat milk**.
