Onion Pakora, also known as Onion Bhaji, is a crispy and flavorful Indian snack made with gram flour, spices, and onions. It’s perfect for a rainy day, served with chutney and masala chai!
**Ingredients** (Serves 3-4)
- 2 large onions, thinly sliced
- 1 cup besan (gram flour)
- 2 tablespoons rice flour (for extra crispiness)
- 2 green chilies, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1 teaspoon ajwain (carom seeds) (optional)
- 1/2 teaspoon garam masala
- 1/2 teaspoon salt (adjust to taste)
- 2 tablespoons chopped coriander leaves
- 1/4 cup water (adjust as needed)
- Oil for deep frying
**Instructions**
**Step 1: Prepare the Batter**
1. In a mixing bowl, add **sliced onions, green chilies, cumin seeds, ajwain, turmeric, red chili powder, garam masala, and salt**.
2. Mix well and let it sit for **5-10 minutes** to release water from the onions.
3. Add **besan, rice flour, and coriander leaves**, then mix again.
4. Gradually add **water** (little at a time) to make a thick batter that coats the onions.
**Step 2: Fry the Pakoras**
1. Heat oil in a deep pan over **medium heat**.
2. Drop small portions of batter into the hot oil using your fingers or a spoon.
3. Fry until **golden brown and crispy**, stirring occasionally.
4. Remove and drain excess oil on a paper towel.
**Step 3: Serve & Enjoy**
- Serve hot with **mint chutney, tamarind chutney, or ketchup**!
- Enjoy with a cup of **masala chai** for the perfect snack.
**Tips for Crispy Pakoras:**
- Avoid adding too much water—the batter should be thick, not runny.
