Garlic Butter Chicken with Vegetables
**Servings:** 4
**Prep Time:** 10 minutes
**Cook Time:** 20 minutes
**Ingredients:**
- 2 chicken breasts (cut into bite-sized pieces)
- 1 zucchini (sliced)
- 1 bell pepper (sliced)
- 1 cup cherry tomatoes (halved)
- 4 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
- 1 teaspoon dried oregano (or Italian seasoning)
- 1 tablespoon olive oil
- ¼ cup grated Parmesan cheese (optional)
- Fresh parsley (chopped, for garnish)
**Instructions:**
1. **Cook the Chicken:** Heat olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt, pepper, and paprika, and cook for 6–7 minutes until golden and cooked through. Remove from the pan and set aside.
2. **Sauté the Vegetables:** In the same pan, melt the butter. Add garlic and sauté for 30 seconds until fragrant. Toss in zucchini, bell pepper, and cherry tomatoes. Cook for 5–7 minutes until tender but still crisp.
3. **Combine Everything:** Return the cooked chicken to the pan. Stir in red pepper flakes and oregano. Let everything cook together for 2 minutes to absorb flavors.
4. **Finish and Serve:** Sprinkle with Parmesan cheese and fresh parsley. Serve hot with rice, pasta, or crusty bread.
