Creamy Tuscan Chicken

#### **Ingredients:**
- 2 large chicken breasts (cut into fillets or use 4 small breasts)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 2 cups baby spinach
- ½ cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
#### **Instructions:**
1. **Season & Sear the Chicken:**
- Season the chicken with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
2. **Sauté the Garlic & Veggies:**
- Reduce heat to medium. Add butter, garlic, and cherry tomatoes. Sauté for 2 minutes until tomatoes soften.
- Stir in spinach and cook for another minute until wilted.
3. **Make the Creamy Sauce:**
- Pour in the chicken broth and let it simmer for 2 minutes.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until the sauce thickens slightly.
4. **Combine & Serve:**
- Return the chicken to the pan and let it cook for 5 minutes in the sauce.
- Serve hot with pasta, mashed potatoes, or crusty bread.
