Banana Oat Pancakes

**Servings:** 4 (Makes about 8 pancakes)  

**Prep Time:** 5 minutes  

**Cook Time:** 10 minutes  


#### **Ingredients:**  

- 2 ripe bananas (mashed)  

- 2 eggs  

- 1 cup rolled oats  

- ½ teaspoon baking powder  

- ½ teaspoon cinnamon  

- ½ teaspoon vanilla extract  

- ¼ cup milk (dairy or non-dairy)  

- 1 tablespoon honey or maple syrup (optional)  

- Butter or oil (for cooking)  


#### **Instructions:**  


1. **Blend the Batter:** In a blender, combine bananas, eggs, oats, baking powder, cinnamon, vanilla, milk, and honey. Blend until smooth. Let the batter sit for 5 minutes to thicken slightly.  


2. **Heat the Pan:** Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.  


3. **Cook the Pancakes:** Pour about ¼ cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface, then flip and cook for another 1–2 minutes until golden brown.  


4. **Serve & Enjoy:** Serve warm with fresh fruit, maple syrup, or yogurt.
