**Ingredients:**
- 2 large chicken breasts (halved into cutlets)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 oz mushrooms (sliced)
- 4 cloves garlic (minced)
- 1 teaspoon dried thyme (or Italian seasoning)
- ½ cup chicken broth
- 1 cup heavy cream (or half & half)
- ½ cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
#### **Instructions:**
1. **Season & Sear the Chicken:**
- Season the chicken cutlets with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
2. **Cook the Mushrooms:**
- Reduce heat to medium, add butter to the same pan, and sauté mushrooms for 4–5 minutes until browned.
- Add garlic and thyme, cooking for another 30 seconds until fragrant.
3. **Make the Sauce:**
- Pour in the chicken broth and let it simmer for 2 minutes.
- Stir in the heavy cream and Parmesan cheese, mixing until smooth.
4. **Combine & Serve:**
- Return the chicken to the pan and simmer for 5 minutes, letting the flavors blend.
- Garnish with fresh parsley and serve hot with pasta, rice, or mashed potatoes.
