Avocado Toast with Poached Egg

A simple yet satisfying breakfast packed with healthy fats and protein. Perfect for a quick morning meal!  


**Ingredients** (Serves 1)  

- 1 slice of whole-grain or sourdough bread  

- 1/2 ripe avocado  

- 1 egg  

- 1/2 teaspoon lemon juice  

- Salt & pepper to taste  

- 1/4 teaspoon red pepper flakes (optional)  

- Fresh herbs (like cilantro or chives) for garnish  


**Instructions**  

1. **Toast the Bread:** Toast your slice of bread until golden brown and crispy.  

2. **Mash the Avocado:** In a bowl, mash the avocado with lemon juice, salt, and pepper. Spread it evenly over the toasted bread.  

3. **Poach the Egg:** Bring a small pot of water to a gentle simmer. Crack an egg into a small bowl, then carefully slide it into the water. Cook for about 3-4 minutes, then remove with a slotted spoon.  

4. **Assemble & Serve:** Place the poached egg on top of the avocado toast. Sprinkle with red pepper flakes and fresh herbs. Enjoy!  


This breakfast is quick, nutritious, and full of flavor. You can also add toppings like cherry tomatoes, feta cheese, or smoked salmon for extra variety!
