Vegetable Upma Recipe (Soft & Healthy)
Vegetable Upma is a classic South Indian breakfast made with rava (semolina), mixed vegetables, and mild spices. It’s healthy, filling, and quick to prepare.
📝 Ingredients
Rava / semolina – 1 cup
Oil or ghee – 2 tbsp
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Chana dal – 1 tsp
Green chilli – 1 (finely chopped)
Ginger – 1 tsp (chopped)
Onion – 1 medium (chopped)
Mixed vegetables – 1 cup (carrot, beans, peas)
Curry leaves – 8–10
Water – 2½ cups
Salt – to taste
Lemon juice – 1 tsp
Coriander leaves – for garnish
👩🍳 How to Make Vegetable Upma
1. Dry roast rava on low flame until aromatic. Keep aside.
2. Heat oil or ghee in a pan. Add mustard seeds, urad dal, and chana dal.
3. When they splutter, add green chilli, ginger, curry leaves, and onion. Sauté until soft.
4. Add vegetables and cook for 2–3 minutes.
5. Add water and salt. Bring to a boil.
6. Slowly add roasted rava, stirring continuously to avoid lumps.
7. Cook on low flame until soft and fluffy.
8. Add lemon juice and garnish with coriander leaves.

Serve hot with coconut chutney or pickle.

Always roast rava for soft, non-sticky upma.
Add a little ghee at the end for extra flavor
