How to make golgappe

 

Here is a perfect Golgappa / Pani Puri recipe you can easily make at home 👇😋


Golgappa (Pani Puri) Recipe


🟠 INGREDIENTS


1️⃣ For Golgappa Puris

1 cup semolina (suji / rava – fine)

2 tbsp maida (optional but makes puris crispy)

A pinch of salt

Water (as needed)

Oil for frying


2️⃣ For Spicy Pani

1 cup mint leaves

½ cup coriander leaves

2–3 green chillies

1-inch ginger

1 lemon

1 tsp black salt

1 tsp roasted jeera powder

1 tsp chaat masala

Salt to taste

4 cups cold water


3️⃣ For Stuffing

2 boiled potatoes (chopped)

½ cup boiled chana or moong

1 tsp chaat masala

1 tsp red chilli powder

Salt

Finely chopped onions (optional)



🍳 HOW TO MAKE GOLGAPPA PURIS


1️⃣ Mix Dough

In a bowl, add suji + maida + salt.

Add little water and make a tight dough (sturdiest like poori dough).

Rest for 20 minutes.


2️⃣ Roll & Cut

Knead again for 1 minute.

Roll the dough thin.

Cut small round puris using a lid/cutter (coin-sized).


3️⃣ Fry

Heat oil on medium-high flame.

Add puris and gently press with a spoon to puff.

Fry until crispy and light golden.

Remove and let them cool completely.


💡 Store in airtight jar for 2–3 weeks.



🥗 HOW TO MAKE PANI


1️⃣ Blend

Blend the following into a fine paste:

Mint

Coriander

Green chillies

Ginger

Lemon juice


2️⃣ Add Spices

Add the paste into a bowl and mix:

Black salt

Jeera powder

Chaat masala

Salt

3️⃣ Add Water

Add 4 cups cold water.

Adjust taste (more lemon or salt if needed).


🥔 STUFFING MIX


Mix:

Boiled potatoes

Chana / moong

Salt

Chaat masala

Red chilli powder


Onions (optional)


🍽️ HOW TO SERVE

1. Crack a hole in the puri.

2. Add 1 spoon potato stuffing.

3. Dip into spicy mint pani.

4. Enjoy immediately 😍
