How to make benne muruku
Here’s a simple and traditional Benne Muruku (Butter Murukku) recipe — crispy, light, and melt-in-the-mouth! 🧈
🧂 Ingredients:
Rice flour – 2 cups
Roasted gram flour (pottukadalai flour) – ½ cup
Butter – 2 tbsp (softened)
Cumin seeds or sesame seeds – 1 tsp
Asafoetida (hing) – a pinch
Salt – to taste
Water – as needed (for kneading)
Oil – for deep frying
🍳 Instructions:
1. Make the Dough:
In a large bowl, mix rice flour, roasted gram flour, salt, cumin/sesame seeds, and asafoetida.
Add softened butter and mix well with your fingers until it becomes crumbly.
Gradually add water and knead into a soft, smooth dough (not sticky).
2. Shape the Murukku:
Grease the murukku press and use the star-shaped plate.
Fill it with the dough.
3. Frying:
Heat oil in a deep pan on medium flame.
Press murukku directly into hot oil or on parchment paper first (then transfer to oil).
Fry till golden and crisp, turning occasionally.
Drain on paper towels.
4. Cool and Store:
Once cooled completely, store in an airtight container.
💡 Tips:
Do not overheat the oil; medium flame gives perfect crispness.
You can add a pinch of chilli powder for a spicy version.
Replace butter with ghee for extra flavor.
