How to Make Upma
Ingredients:
Semolina (Rava / Suji) – 1 cup
Water – 2½ cups
Onion – 1 medium (finely chopped)
Green chili – 1 (chopped, optional)
Ginger – 1 tsp (grated)
Mustard seeds – ½ tsp
Urad dal – 1 tsp
Chana dal – 1 tsp
Curry leaves – 6–8
Salt – to taste
Oil or ghee – 2 tbsp
Hing (asafoetida) – a pinch (optional)
Cashew nuts – 6–8 (optional)
Coriander leaves – for garnishing
Lemon juice – 1 tsp (optional)
Instructions:
1. Dry roast rava in a pan on medium heat till light golden and aromatic (4–5 minutes). Remove and keep aside.
2. In the same pan, heat oil or ghee. Add mustard seeds and let them splutter.
3. Add urad dal, chana dal, and cashews. Sauté till golden.
4. Add hing, chopped green chilies, ginger, curry leaves, and onion. Sauté till onions turn soft.
5. Add water and salt. Bring it to a boil.
6. Once the water boils, reduce the flame and slowly add roasted rava, stirring continuously to avoid lumps.
7. Cover and cook on low heat for 3–4 minutes until rava absorbs all the water.
8. Turn off the heat. Let it rest for 2 minutes.
9. Add chopped coriander leaves and lemon juice. Mix well.
