How to Make Aloo Sabzi (Potato Curry)


Ingredients:


Potatoes (Aloo) – 3 medium-sized (boiled and peeled)


Onion – 1 medium (finely chopped)


Tomato – 1 medium (chopped)


Green chili – 1 (optional, chopped)


Ginger-garlic paste – 1 tsp


Mustard seeds – ½ tsp


Cumin seeds – ½ tsp


Turmeric powder – ¼ tsp


Red chili powder – ½ tsp


Coriander powder – 1 tsp


Garam masala – ½ tsp


Salt – to taste


Oil – 2 tbsp


Water – 1 cup


Fresh coriander leaves – for garnishing

Instructions:


1. Boil the potatoes: Peel and cut them into cubes.



2. Heat oil in a pan. Add mustard seeds and cumin seeds. Let them splutter.



3. Add chopped onions and sauté till golden brown.



4. Add ginger-garlic paste and green chili. Sauté for a minute.



5. Add chopped tomatoes and cook till soft and mushy.



6. Add turmeric, red chili powder, coriander powder, and salt. Cook for 1-2 minutes.



7. Add the boiled potato cubes. Mix well to coat them with the masala.



8. Pour 1 cup water. Mix and simmer for 5–7 minutes.



9. Add garam masala and stir. Cook for 1–2 minutes more.



10. Garnish with chopped coriander leaves.



Serving Suggestion:


Serve hot with roti, puri, paratha, or r

ice.
