🍛 One-Pot Chicken and Rice


This one-pot wonder is flavorful, filling, and easy to clean up! Juicy chicken and perfectly seasoned rice make it a weeknight favorite.

Ingredients:


4 bone-in, skin-on chicken thighs (or boneless if preferred)


1 cup long-grain white rice (uncooked)


1 small onion, chopped


2 cloves garlic, minced


2 tablespoons olive oil


2 cups chicken broth


1 teaspoon paprika


½ teaspoon turmeric (optional, for color)


Salt and pepper to taste


Fresh parsley for garnish


Instructions:


1. Season the chicken

Pat chicken dry and season with salt, pepper, and paprika on both sides.



2. Brown the chicken

Heat olive oil in a large, deep skillet or pot over medium-high heat. Sear chicken (skin-side down) for 4–5 minutes until golden brown. Flip and cook another 3 minutes. Remove and set aside.



3. Sauté the aromatics

In the same pot, add the chopped onion and sauté for 2–3 minutes. Add garlic and stir until fragrant.



4. Add rice and liquid

Stir in uncooked rice, turmeric (if using), and chicken broth. Bring to a simmer, scraping the bottom of the pot.



5. Cook everything together

Nestle the chicken back into the pot, skin-side up. Cover, reduce heat to low, and cook for 20–25 minutes until the rice is tender and the chicken is cooked through.



6. Rest and serve

Turn off the heat and let it sit, covered, for 5 minutes. Garnish with chopped parsley and serve warm.



💡 Tips:


Add peas, carrots, or chopped bell peppers for extra nutrition.


Swap white rice with brown rice (adjust cooking time to about 45–50 mins and increase broth to 2½ cups).
