Aloo Gobi



 Here’s a recipe for Aloo Gobi (Potato and Cauliflower Curry), a classic vegetarian dish from Indian cuisine that’s both comforting and flavorful.


Recipe: Aloo Gobi (Potato and Cauliflower Curry)


Ingredients:


2 medium potatoes, peeled and cubed


1 small cauliflower, cut into florets


1 large onion, finely chopped


2 tomatoes, finely chopped


2-3 green chilies, slit (optional, adjust to spice preference)


1-inch piece ginger, grated


3-4 garlic cloves, minced


1 tsp cumin seeds


1/2 tsp turmeric powder


1 tsp coriander powder


1 tsp cumin powder


1 tsp garam masala


1/2 tsp red chili powder


1/4 tsp asafoetida (hing)


Salt to taste


2 tbsp oil


Fresh coriander leaves, chopped (for garnish)


1 tbsp lemon juice



Instructions:


1. Cook the Vegetables:


Heat oil in a large pan or kadhai over medium heat.


Add cumin seeds and asafoetida. Let the cumin seeds splutter for a few seconds.


Add the chopped onions and sauté until golden brown.


Add the ginger and garlic, and cook for another 1-2 minutes until fragrant.


Stir in the chopped tomatoes, green chilies, and all the spices: turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook until the tomatoes soften and release oil from the sides of the pan, about 5 minutes.



2. Add Potatoes and Cauliflower:


Add the cubed potatoes and cauliflower florets to the pan. Mix well to coat the vegetables with the spice mixture.


Cover the pan and cook on low-medium heat for about 15-20 minutes, stirring occasionally. Add a splash of water if needed to prevent the vegetables from sticking to the pan.


Check the potatoes and cauliflower for doneness by pricking them with a fork. They should be soft but not mushy.



3. Final Touches:


Once the potatoes and cauliflower are cooked, sprinkle garam masala over the top and mix gently.


Cook for another 2-3 minutes to allow the flavors to meld together.


Squeeze fresh lemon juice over the curry and give it one last stir.



4. Garnish and Serve:


Garnish with chopped coriander leaves for freshness and color.


Serve hot with roti, naan, or steamed rice.

You can add peas or carrots to this curry for extra flavor and texture.


Adjust the spice levels to your preference by adding or reducing the amount of chili powder and green chilies.


For a richer taste, you can add a tablespoon of fresh cream or a dollop of yogurt after cooking.
