Pav Bhaji Recipe

Ingredients


**For the Bhaji (Vegetable Curry):**


- 2 tablespoons butter

- 1 tablespoon oil

- 1 teaspoon cumin seeds

- 1 large onion, finely chopped

- 1 green bell pepper, finely chopped

- 2 tomatoes, finely chopped

- 1 cup cauliflower florets

- 1 cup potatoes, peeled and diced

- 1/2 cup green peas

- 1 tablespoon ginger-garlic paste

- 2 teaspoons pav bhaji masala

- 1 teaspoon red chili powder

- 1/2 teaspoon turmeric powder

- Salt to taste

- 2 tablespoons lemon juice

- Fresh coriander leaves, chopped (for garnishing)


**For the Pav (Bread Rolls):**


- 8 pav buns or soft dinner rolls

- 2 tablespoons butter

- 1/2 teaspoon pav bhaji masala

 

**Instructions**

1. **Cook the Vegetables**: In a large pot, add potatoes, cauliflower, and green peas. Cover with water and boil until tender. Drain and mash the vegetables lightly.


2. **Prepare the Bhaji**: Heat butter and oil in a large pan over medium heat. Add cumin seeds and let them sizzle. Add chopped onions and sauté until translucent. Stir in ginger-garlic paste and cook until the raw aroma disappears.


3. **Add Bell Pepper and Tomatoes**: Add chopped bell pepper and cook for a few minutes until softened. Add chopped tomatoes and cook until they become mushy and the oil starts to separate.


4. **Incorporate Spices**: Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for another 2 minutes.


5. **Combine with Vegetables**: Add the mashed vegetables to the pan. Mix thoroughly and add water as needed to achieve a semi-thick consistency. Let it simmer for 10-15 minutes, stirring occasionally.


6. **Finish the Bhaji**: Stir in lemon juice and garnish with chopped coriander leaves.


7. **Toast the Pav**: Slice the pav buns horizontally. Heat butter on a griddle or pan, sprinkle with pav bhaji masala, and toast the buns until golden brown.


8. **Serve**: Serve the hot bhaji with toasted pav, accompanied by additional butter, chopped onions, and lemon wedges.
