Jhunka (Pithla) Recipe

Ingredients


- 1 cup gram flour (besan)

- 2 tablespoons oil

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1 large onion, finely chopped

- 2-3 green chilies, finely chopped

- 1 tablespoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (optional)

- Salt to taste

- 2 cups water

- Fresh coriander leaves, chopped (for garnishing)


 Instructions


1. **Prepare the Gram Flour Mixture**: In a bowl, combine gram flour with 2 cups of water, whisking to ensure there are no lumps. Set aside.


2. **Sauté Aromatics**: Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Add cumin seeds and sauté for a few seconds. Add chopped onions and green chilies; cook until the onions turn translucent. Stir in ginger-garlic paste and cook until the raw aroma dissipates.


3. **Add Spices**: Incorporate turmeric powder, red chili powder (if using), and salt into the onion mixture. Mix well.


4. **Cook the Gram Flour Mixture**: Slowly pour the gram flour mixture into the pan, stirring continuously to prevent lumps. Cook on medium-low heat, stirring occasionally, until the mixture thickens to a porridge-like consistency. This should take about 5-7 minutes.


5. **Garnish and Serve**: Once the desired consistency is achieved, garnish with chopped coriander leaves. Serve hot with **Bhakri**, roti, or steamed rice.
