Onion Bhajis Recipe

Enjoy these crunchy and spicy onion fritters, a favorite in Indian cuisine.


Ingredients

- 2 medium onions, thinly sliced

- 1 cup gram flour (besan)

- 2 tablespoons rice flour

- 1 teaspoon cumin seeds

- 1 teaspoon fennel seeds

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 green chili, finely chopped

- 1 tablespoon fresh coriander, chopped

- Salt to taste

- Water, as needed

- Oil, for deep frying


Instructions


1. Prepare the Batter:

   - In a large mixing bowl, combine gram flour, rice flour, cumin seeds, fennel seeds, turmeric powder, red chili powder, and salt.

   - Add the sliced onions, chopped green chili, and fresh coriander to the dry ingredients.

   - Gradually add water to the mixture, stirring continuously, until a thick batter forms that coats the onions well.


2. Heat the Oil:

   - Pour oil into a deep frying pan or wok, filling it to about 2 inches deep. Heat the oil over medium heat until it reaches 180°C (350°F).


3. **Fry the Bhajis:**

   - Carefully drop spoonfuls of the batter-coated onions into the hot oil, ensuring not to overcrowd the pan.

   - Fry the bhajis for 4-5 minutes, turning occasionally, until they are crisp and golden brown.

   - Use a slotted spoon to remove the bhajis from the oil and drain them on paper towels to remove excess oil.


4. Serve:

   - Serve the onion bhajis hot with your choice of chutney or pickles. A coriander chutney made by blending fresh coriander, green chili, ginger, lime juice, and oil pairs excellently with these fritters.
