Creamy Tuscan Salmon

 

Here’s a delicious recipe for **Creamy Tuscan Salmon**—a rich and flavorful dish that’s perfect for a special meal.  


Creamy Tuscan Salmon

**Servings:** 4  

**Prep Time:** 10 minutes  

**Cook Time:** 15 minutes  


#### **Ingredients:**  

- 4 salmon fillets (skin on or off)  

- 1 tbsp olive oil  

- 2 tbsp butter  

- 4 cloves garlic, minced  

- 1 cup cherry tomatoes, halved  

- 1½ cups baby spinach  

- 1 cup heavy cream  

- ½ cup grated Parmesan cheese  

- ½ tsp red pepper flakes (optional)  

- 1 tsp Italian seasoning  

- ½ tsp salt  

- ½ tsp black pepper  

- 2 tbsp fresh basil or parsley, chopped (for garnish)  


#### **Instructions:**  

1. **Sear the salmon:** Heat olive oil in a large skillet over medium-high heat. Season salmon with salt and pepper, then cook for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.  

2. **Make the sauce:** In the same pan, melt butter and sauté garlic for 30 seconds. Add cherry tomatoes and cook for 2 minutes until softened.  

3. **Add spinach & cream:** Stir in baby spinach, then pour in the heavy cream and Parmesan cheese. Add Italian seasoning and red pepper flakes. Stir and let simmer for 2-3 minutes until the sauce thickens.  

4. **Combine & serve:** Return the salmon to the pan, spoon the sauce over the fillets, and let it heat for another minute. Garnish with fresh basil or parsley.  

5. **Enjoy!** Serve with rice, pasta, or crusty bread.
