- 4 salmon fillets (skin on or off)
- 1 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1½ cups baby spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp red pepper flakes (optional)
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh basil or parsley, chopped (for garnish)
#### **Instructions:**
1. **Sear the salmon:** Heat olive oil in a large skillet over medium-high heat. Season salmon with salt and pepper, then cook for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
