Creamy Garlic Parmesan Mashed Potatoes

#### **Ingredients:**
- 2 lbs (900g) russet or Yukon gold potatoes, peeled and cut into chunks
- 4 cloves garlic, minced
- ½ cup heavy cream (or milk for a lighter version)
- 4 tbsp butter
- ½ cup grated Parmesan cheese
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- 1 tbsp chopped fresh parsley (for garnish)
#### **Instructions:**
1. **Boil the potatoes:** In a large pot, add the potatoes and cover with cold water. Bring to a boil and cook for about 15-20 minutes until fork-tender.
2. **Prepare the garlic butter:** While the potatoes cook, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Remove from heat.
3. **Mash the potatoes:** Drain the potatoes and return them to the pot. Mash them using a potato masher or electric mixer.
4. **Make them creamy:** Add the heavy cream, garlic butter, Parmesan cheese, salt, and black pepper. Stir until smooth and creamy. Adjust seasoning if needed.
5. **Serve:** Garnish with fresh parsley and serve warm.
These mashed potatoes pair perfectly with roasted meats, grilled chicken, or even on their own!
