Aloo Gobi (Potato & Cauliflower Curry)  


Aloo Gobi is a classic Indian dish made with potatoes, cauliflower, and aromatic spices. It's simple, flavorful, and perfect with rice or roti.  


Ingredients  

- 2 medium potatoes, peeled and diced  

- 1 small cauliflower, cut into florets  

- 2 tbsp oil (vegetable or mustard oil)  

- 1 tsp cumin seeds  

- 1 onion, finely chopped  

- 2 tomatoes, chopped  

- 3 cloves garlic, minced  

- 1-inch ginger, grated  

- 1 green chili, chopped (optional)  

- 1 tsp turmeric powder  

- 1 tsp coriander powder  

- ½ tsp red chili powder (adjust to taste)  

- ½ tsp garam masala  

- ½ tsp salt (or to taste)  

- ¼ cup water (if needed)  

- 2 tbsp chopped fresh cilantro (for garnish)  


Instructions 

1. **Heat the oil:** In a large pan, heat oil over medium heat. Add cumin seeds and let them splutter.  

2. **Sauté aromatics:** Add onions and sauté until golden brown. Then, add garlic, ginger, and green chili. Cook for another minute.  

3. **Cook the tomatoes:** Add chopped tomatoes and cook until soft. Stir in turmeric, coriander powder, red chili powder, and salt. Mix well.  

4. **Add potatoes & cauliflower:** Toss in the potatoes and cauliflower, mixing them well with the spices.  

5. **Cover and cook:** Lower the heat, cover, and let it cook for 15-20 minutes, stirring occasionally. If needed, add a little water to prevent burning.  

6. **Finish & serve:** Once the potatoes and cauliflower are tender, sprinkle garam masala and mix well. Garnish with fresh cilantro.
