Classic Southern Fried Chicken

Classic Southern Fried Chicken

Ingredients: 

For the Chicken:  

- 4 bone-in, skin-on chicken pieces (legs, thighs, or breasts)  

- 2 cups buttermilk  

- 1 teaspoon salt  

- 1 teaspoon black pepper  

- 1 teaspoon hot sauce (optional)  


For the Coating:  

- 2 cups all-purpose flour  

- 1 teaspoon salt  

- 1 teaspoon black pepper  

- 1 teaspoon paprika  

- ½ teaspoon garlic powder  

- ½ teaspoon onion powder  

- ½ teaspoon cayenne pepper (optional for extra spice)  


 For Frying

- 3 cups vegetable oil (for deep frying)  


Instructions:

1. Marinate the Chicken

In a large bowl, combine the chicken pieces, buttermilk, salt, black pepper, and hot sauce (if using). Cover and refrigerate for at least 1 hour (or overnight for best flavor).  


2. Prepare the Coating

In a shallow dish, mix the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.  


3. Coat the Chicken

Remove the chicken from the buttermilk, letting excess drip off. Dredge each piece in the flour mixture, pressing firmly to coat well. Let the coated chicken rest on a wire rack for 10 minutes to help the breading stick.  


4. Heat the Oil

In a deep skillet or Dutch oven, heat the oil to 350°F (175°C).  


5. Fry the Chicken

Carefully add the chicken pieces to the hot oil, cooking in batches to avoid overcrowding. Fry for about **12-15 minutes**, turning occasionally, until golden brown and the internal temperature reaches **165°F (75°C)**.  


6. Drain and Serve

Transfer the fried chicken to a paper towel-lined plate or a wire rack to drain excess oil. Let it rest for a few minutes before serving.  


Serving Suggestions:

Pair your crispy fried chicken with coleslaw, mashed potatoes, cornbread, or mac and cheese for a true Southern feast!
