Fluffy Cottage Cheese Pancakes


These protein-packed pancakes are soft, fluffy, and naturally sweet, making them a perfect healthy breakfast!  


**Ingredients** (Serves 2-3)  

- 1/2 cup cottage cheese  

- 2 eggs  

- 1/2 cup rolled oats  

- 1/4 cup milk (dairy or non-dairy)  

- 1 teaspoon vanilla extract  

- 1/2 teaspoon baking powder  

- 1 teaspoon honey or maple syrup (optional)  

- Butter or oil for cooking  


 **Instructions**  

1. **Blend the Batter:** In a blender, combine cottage cheese, eggs, oats, milk, vanilla, baking powder, and honey. Blend until smooth.  

2. **Heat the Pan:** Heat a non-stick skillet over medium heat and lightly grease with butter or oil.  

3. **Cook the Pancakes:** Pour small amounts of batter into the pan. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 1-2 minutes.  

4. **Serve & Enjoy:** Stack them up and top with fresh fruit, nuts, or a drizzle of honey!  


These pancakes are naturally gluten-free and can be made dairy-free by using a plant-based cottage cheese alternative.
