Crispy & Juicy Jalebi Recipe


Jalebi is a popular Indian sweet, deep-fried to a golden crisp and soaked in sugar syrup, making it irresistibly delicious.  


 **Ingredients**  


**For the Jalebi Batter:**  

- 1 cup all-purpose flour (maida)  

- 2 tablespoons cornstarch (for extra crispiness)  

- 1/2 teaspoon baking powder  

- 1/2 cup yogurt  

- 3/4 cup water (adjust as needed)  

- 1 teaspoon lemon juice (helps fermentation)  

- 1/2 teaspoon turmeric or yellow food color  

- 1/2 teaspoon cardamom powder (optional)  

- 1 teaspoon ghee (clarified butter)  

- Oil or ghee for frying  


**For the Sugar Syrup:**  

- 1 cup sugar  

- 1/2 cup water  

- 1/2 teaspoon cardamom powder  

- 1 teaspoon lemon juice (prevents crystallization)  

- A few saffron strands (optional)  


**Instructions**  


**Step 1: Prepare the Batter**  

1. In a bowl, mix all-purpose flour, cornstarch, baking powder, and cardamom powder.  

2. Add yogurt and water gradually, whisking to form a smooth, thick batter.  

3. Add turmeric or food color, lemon juice, and ghee, then mix well.  

4. Cover and let it ferment for 6-8 hours (or overnight) in a warm place.  


 **Step 2: Make the Sugar Syrup**  

1. In a pan, add sugar and water, then heat until it dissolves completely.  

2. Add cardamom powder, saffron, and lemon juice, then simmer until it reaches a sticky, one-string consistency.  

3. Keep warm on low heat while frying the jalebis.  


**Step 3: Fry the Jalebis**  

1. Heat oil or ghee in a deep pan over medium heat.  

2. Pour the batter into a piping bag or a squeeze bottle with a small nozzle.  

3. Squeeze the batter into hot oil in circular spiral shapes.  

4. Fry until golden and crisp, then remove and drain excess oil.  


**Step 4: Soak & Serve**  

1. Immediately dip the hot jalebis into the warm sugar syrup for 30 seconds.  

2. Remove and serve warm, garnished with chopped pistachios or almonds.
