Creamy Avocado Pasta
Ingredients:
- 12 oz spaghetti or your favorite pasta
- 2 ripe avocados, pitted and peeled
- 1/4 cup fresh basil leaves
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1/4 cup extra-virgin olive oil
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- Cherry tomatoes, halved (optional, for garnish)
- Fresh basil leaves, for garnish
**Instructions:**
1. **Cook the Pasta**: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
2. **Prepare the Avocado Sauce**: In a food processor or blender, combine the avocados, basil leaves, minced garlic, lemon juice, and olive oil. Blend until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.
3. **Season the Sauce**: Season the avocado sauce with salt and pepper to taste. If you like, you can also add the grated Parmesan cheese for extra flavor.
4. **Combine Pasta and Sauce**: In a large bowl, toss the cooked pasta with the avocado sauce until evenly coated. If needed, add more reserved pasta water to loosen the sauce.
5. **Serve**: Divide the creamy avocado pasta among serving plates. Garnish with cherry tomato halves and fresh basil leaves if desired. Serve immediately.
