How to Make Masala Dosa at Home – Easy South Indian Recipe
Masala dosa is one of the most popular South Indian breakfast recipes. A crispy golden dosa filled with flavorful potato masala and served with coconut chutney and sambar makes a delicious and satisfying meal.
The good news is that you can easily prepare restaurant-style masala dosa at home with a few simple ingredients.
Ingredients
For Dosa Batter
2 cups rice
½ cup urad dal
1 teaspoon fenugreek seeds
Salt to taste
Water as required
Oil or ghee for cooking
For Potato Masala
4 boiled potatoes
2 onions, sliced
2 green chilies, chopped
1 teaspoon mustard seeds
½ teaspoon turmeric powder
A few curry leaves
1–2 tablespoons oil
Salt to taste
Fresh coriander leaves
How to Prepare Masala Dosa
Step 1: Prepare the Dosa Batter
Wash the rice, urad dal and fenugreek seeds thoroughly. Soak them separately for about 4–6 hours.
Grind them into a smooth batter using enough water. Mix everything together, cover the bowl and leave it to ferment overnight or for around 8–12 hours.
Once fermented, add salt and adjust the consistency with a little water. The batter should be smooth and easily spreadable.
Step 2: Make the Potato Masala
Heat oil in a pan and add mustard seeds. Once they start spluttering, add curry leaves and green chilies.
Add sliced onions and sauté until they become soft. Add turmeric powder and salt.
Now add the boiled and mashed potatoes. Mix everything well and cook for another 2–3 minutes.
Finally, add chopped coriander leaves and turn off the heat.
Step 3: Make Crispy Dosa
Heat a dosa tawa over medium-high heat. Pour one ladleful of batter onto the centre and spread it into a thin, round dosa.
Drizzle a little oil around the edges. Cook until the dosa becomes golden brown and crispy.
Place some potato masala in the centre, fold the dosa and serve hot.

Tips for Crispy Masala Dosa
For a perfectly crispy dosa, make sure the batter is well fermented and the tawa is properly heated. Spread the batter thinly and cook until the bottom turns golden and crisp.
