Crispy Aloo Gobi Recipe | Easy Indian Homemade Curry

 Aloo Gobi Recipe

Aloo Gobi is a classic Indian dish made with potatoes, cauliflower, onions, tomatoes, and flavorful spices. It is simple, tasty, and perfect with chapati, roti, or rice.

Ingredients

2 potatoes (diced)

1 medium cauliflower (cut into florets)

2 onions (chopped)

2 tomatoes (chopped)

1 tsp ginger-garlic paste

2 green chilies

1 tsp cumin seeds

1 tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

Salt to taste

2 tbsp oil

Fresh coriander leaves

Steps to Prepare

1. Prepare the Vegetables

Wash and cut the potatoes and cauliflower into small pieces.

Keep them aside after draining the water.

2. Sauté the Onions

Heat oil in a pan over medium flame.

Add cumin seeds and allow them to crackle.

Add chopped onions and fry until golden brown.

Mix ginger-garlic paste and green chilies.

3. Add Tomatoes and Spices

Add chopped tomatoes and cook until soft.

Mix turmeric powder, chili powder, coriander powder, and salt.

Stir well for 2 minutes.

4. Cook the Vegetables

Add potatoes and cauliflower.

Mix everything properly so the spices coat the vegetables.

Cover with a lid and cook for 15–20 minutes.

Stir occasionally to avoid burning.

5. Garnish and Serve

Sprinkle fresh coriander leaves.

Serve hot with chapati, naan, or rice.

Tips

Add a little garam masala for extra flavor.

Do not overcook the cauliflower.

Use fresh coriander for better taste.
