Egg rice recipe

 

Here’s a simple Egg Rice recipe you can try at home:


Ingredients:


Cooked rice – 2 cups (preferably cooled)


Eggs – 3


Onion – 1 (finely chopped)


Green chilies – 2 (slit)


Ginger-garlic paste – 1 tsp


Turmeric powder – ¼ tsp


Red chili powder – 1 tsp


Pepper powder – ½ tsp


Garam masala – ½ tsp (optional)


Salt – to taste


Oil / ghee – 2 tbsp


Coriander leaves – few (chopped)

Preparation:


1. Scramble the eggs:


Heat 1 tbsp oil in a pan.


Break in the eggs, add a pinch of salt and pepper.


Scramble well and cook. Keep aside.




2. Make the masala:


In the same pan, add remaining oil.


Fry onions and green chilies till golden.


Add ginger-garlic paste, sauté till raw smell goes.


Add turmeric, red chili powder, pepper, garam masala, and salt.




3. Mix rice & eggs:


Add scrambled eggs back into the pan.


Add cooked rice, mix gently so grains don’t break.


Check salt and spice, adjust if needed.



4. Finish & serve:


Garnish with coriander leaves.


Serve hot with raita, pickle, or papad.
